Honeylady says...
Question: How should honey be stored?
Answer: Store honey at room temperature. Refrigeration tends to hasten crystallization.
Question: My honey crystallized in the jar. What do I do?
Answer: Place the jar in warm water or zap in the microwave on defrost, stirring occasionally until all crystals are dissolved.
Question: How does honey compare with sugar?
Answer: Because of its high fructose content, honey is sweeter than table sugar. It also contains various trace minerals, enzymes and antioxidant properties.
Question: How do I substitute honey for sugar in a recipe?
Answer: For best results, use recipes developed for honey. For ease in measuring, first coat cup or spoon with nonstick spray or cooking oil. When substituting, replace about half of the sugar with about 2/3 that amount of honey. In baked goods, add ½ tsp baking powder per cup of honey used. Reduce the oven temperature about 25 degrees.
FUN FACTS
• The taste and color of honey differs depending on which flowers the bees visit.
• Honey bees visit two million flowers to make one pound of honey.
• The raising of bees is known as apiculture.
